Kettle by kettle, we combine flour and fresh butter, creating a nutty, smooth, rich roux that is a signature of Truesoups. To the roux, we add stock to make the veloutés, or whole milk and cream to make the béchamels that define our cream-based varieties. Our mirepoix is created by sautéing only freshly prepared vegetables in the kettle.
